2-Min High Protein, Choc Chip Mug Cake

A delicious and fluffy protein mug cake that takes less than a minute to make and is the perfect single serving dessert/breakfast! Topped with chocolate chips and a scoop of vanilla ice cream (or two 🙈). Good thing its single serve, cause nobody want to share this !

2-Min High Protein, Choc Chip Mug Cake

Ingredients
Dry Ingredients
  • 15g oat flour
  • 15g vegan vanilla protein
  • 1⁄2 tsp baking powder
  • Pinch of sea salt
  • Chocolate Chips
Wet Ingredients
  • 1 egg
  • 1⁄2 ripe banana
  • 2 tbsp of almond milk
  • 1⁄2 tsp of apple cider vinegar
  • (optional) – 1 tbsp of honey/maple syrup
Directions
  1. Grease a ramekin/microwave safe mug with olive oil
  2. Using a fork, mix mashed banana, egg, almond milk and apple cider vinegar until well combined.
  3.  Add in the dry ingredients, continue to mix until there are no lumps of flour
  4. Top with chocolate chips
  5. Place in the microwave for 2, 30 seconds interval at (800W-1000W). Or until cooked in the centre.
  6. Add a scoop of vanilla ice cream or yoghurt ! And Enjoy !
