Banana Protein Pancakes

Protein pancakes are one of my favorite breakfast! Made with almond flour, banana and vegan protein powder. This recipe will keep you feeling energized and satisfied until your next meal !

Banana Protein Pancakes

Serves: 2-3 (6 pancakes)
Cook Time: 10 Minutes
Prep Time: 5 Minutes
Gluten Free · Dairy Free · Vegetarian

Ingredients
  • 1 banana
  • 90g of almond meal
  • 30g of vegan vanilla protein powder (or sub with more almond meal)
    (I used @macromike vanilla peanut protein)
  • 2 eggs
  • Almond milk to thin (~¼ cup)
  • 1 tsp of cinnamon
  • 1 tsp of lemon juice (it’ll help to make the pancake rise)
  • 1 tsp of baking powder
Directions
  1. Mix the dry ingredients (almond meal, protein & baking powder, cinnamon)
  2. In another bowl, mash the banana and mix with the wet ingredients – almond milk, eggs, lemon juice
  3. Warm a pan on low-medium heat, add some olive or coconut oil.
  4. Scoop around 3 tbsp of dough for each pancake. Cook for 1-2 mins each side or until golden brown!
  5. If pan gets too hot, remove from heat before cooking another pancake !
  6. Top with berries, banana, peanut butter and enjoy!
