Banana Protein Pancakes

Ingredients
- 1 banana
- 90g of almond meal
- 30g of vegan vanilla protein powder (or sub with more almond meal)
(I used @macromike vanilla peanut protein) - 2 eggs
- Almond milk to thin (~¼ cup)
- 1 tsp of cinnamon
- 1 tsp of lemon juice (it’ll help to make the pancake rise)
- 1 tsp of baking powder
Directions
- Mix the dry ingredients (almond meal, protein & baking powder, cinnamon)
- In another bowl, mash the banana and mix with the wet ingredients – almond milk, eggs, lemon juice
- Warm a pan on low-medium heat, add some olive or coconut oil.
- Scoop around 3 tbsp of dough for each pancake. Cook for 1-2 mins each side or until golden brown!
- If pan gets too hot, remove from heat before cooking another pancake !
- Top with berries, banana, peanut butter and enjoy!
