Grilled Tofu Nourish Bowl

This delicious colorful bowl combines deliciously grilled tofu with vibrant vegetables, wholesome grains and creamy avocado. It’s the perfect meal to keep you energized throughout the day !

Grilled Tofu Nourish Bowl

Ingredients
Grilled tofu
  • 300g extra firm tofu
  • 1 tsp of italian herb seasoning
  • 1 tbsp of olive oil
  • Salt & Pepper to taste
Roasted Carrots
  • 2 carrots
  • 1 tsp maple syrup
  • 1 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt & Pepper to taste
Other ingredients
  • Beetroot Hummus (or Hummus)
  • 1⁄2 Avocado
  • 1 Cup of Brown rice
  • 1 Cucumber (Sliced to half moons, 0.5cm thick)
Directions
Tofu
  1. Pre-heat the oven to 180C
  2. Chop the tofu in rectangle, 1cm thick
  3. Place between two kitchen towels and press to remove the excess moisture. Leave for 5 minutes
  4. Cut diagonal slits across the top and bottom of the tofu
  5. Place the tofu on a baking tray, brush olive oil and season with Italian herb, salt and pepper.
  6. Bake for 10 minutes each side ! Turn over the tofu half-way.
Maple Carrots
  1. Slice carrots, 1cm thick
  2. Spread the carrots over a lined baking tray, drizzle with olive oil and maple syrup.
  3. Toss with your hand to make sure they are well coated.
  4. Season with salt, pepper and garlic powder
  5. Bake for 20 minutes
To Serve
  1. Add the brown rice at the base of the bowl
  2. Place the carrot, cucumber, tofu, avocado and hummus on top.
