Grilled Tofu Nourish Bowl

Ingredients
Grilled tofu
- 300g extra firm tofu
- 1 tsp of italian herb seasoning
- 1 tbsp of olive oil
- Salt & Pepper to taste
Roasted Carrots
- 2 carrots
- 1 tsp maple syrup
- 1 tbsp extra virgin olive oil
- 1 tsp garlic powder
- Salt & Pepper to taste
Other ingredients
- Beetroot Hummus (or Hummus)
- 1⁄2 Avocado
- 1 Cup of Brown rice
- 1 Cucumber (Sliced to half moons, 0.5cm thick)
Directions
Tofu
- Pre-heat the oven to 180C
- Chop the tofu in rectangle, 1cm thick
- Place between two kitchen towels and press to remove the excess moisture. Leave for 5 minutes
- Cut diagonal slits across the top and bottom of the tofu
- Place the tofu on a baking tray, brush olive oil and season with Italian herb, salt and pepper.
- Bake for 10 minutes each side ! Turn over the tofu half-way.
Maple Carrots
- Slice carrots, 1cm thick
- Spread the carrots over a lined baking tray, drizzle with olive oil and maple syrup.
- Toss with your hand to make sure they are well coated.
- Season with salt, pepper and garlic powder
- Bake for 20 minutes
To Serve
- Add the brown rice at the base of the bowl
- Place the carrot, cucumber, tofu, avocado and hummus on top.
