Peanut Butter and Jelly Overnight Oats

Inspired by the childhood classic PB and J sandwich, but make it into a healthy
high protein breakfast or snack. Instead of jelly, I'm using a homemade sugar free
mixed berry jam!

I love the combination of fresh berries with creamy peanut butter, so delicious !

Peanut Butter and Jelly Overnight Oats

Ingredients
Oats Recipe
  • 30g whole rolled oats
  • 10g chia seeds
  • ¼ cup unsweetened almond milk
  • ¼ cup unsweetened greek or coconut yoghurt
  • Pinch of sea salt
  • 15g of vegan protein (I used @macromike almond vanilla protein)
  • (Optional) 1tsp of maple syrup or honey
Mixed Berry Jam
  • ½ cup of frozen/fresh blueberries
  • ½ cup of frozen/fresh strawberries
  • ¼ of lemon juice
  • 10g chia seed
  • 2 tbsp of sweetener (I used monk fruit, but honey or maple syrup will work great)
Method
  1. In a mason jar, place the oats, chia seeds, greek yoghurt and protein. Add the almond milk and stir until well combined. Cover and refrigerate overnight ! Let it sit overnight in the fridge.
  2. In a sauce pan, add berries, lemon juice and sweetener. Warm over medium heat until bubbling then add the chia seed.
  3. Then lower the heat to low, and cook for 2 minutes – stirring occasionally.
  4. Put the purée in a jar and set in the refrigerator.
  5. To serve top the oats with berry jam, peanut butter, chopped berries & nuts !
