Peanut Butter Protein Balls

I Love to make protein balls as they are so quick and easy to make.They give me a burst of energy as they are rich in protein and fibre. The chocolate chips definitely makes them taste like a naughty treat ! 😈 Great for meal prep ! I make this at the start of the week to have a quick protein packed snack! Enjoy with your 3pm coffee or as a pre-workout snack.

Ingredients
  • 1 cup rolled oats
  • 1 scoop vanilla or chocolate vegan protein powder
  • 3⁄4 cup peanut butter
  • 1⁄4 cup dark chocolate chips (I used sugar free one from [Lakanto].
  • 1 tsp vanilla extract
  • pinch of sea salt
Directions
  1. Combine ingredients in a large bowl and mix until well combined
  2. Scoop ~1 tbsp of mixture, roll into balls and repeat until the mixture is finished
  3. Store in a container in your fridge (Consume within 7 days!)
  4. Enjoy !
